Ingredients
- 1 15 ounce can chickpeas (garbanzo beans) drained
- 1 shallot chopped
- 4 cloves garlic chopped
- 3 - 4 leaves fresh mint
- 1/4 bunch fresh Italian parsley
- 1/2 tsp kosher salt
- 1 tsp ground cumin
- 1/8 tsp cayenne pepper
- 1 tsp baking powder
- 2 - 4 Tbsp flour
- 1/4 cup olive oil

Instructions
- Combine drained chickpeas, shallot, garlic, mint, and parsley in a food processor. Process the mixture until it forms a smooth paste. Transfer to a mixing bowl.
- Add salt, cumin, cayenne, and baking powder. Mix well to combine.
- Add flour 1 tablespoon at a time until the mixture becomes cohesive enough to form into patties. (You may not need all of the flour.)
- Scoop 1 heaping tablespoon of dough at a time and form into patties. Let patties rest for at least 10 minutes. (Note: patties can be frozen and cooked later.)
- Heat oil in a skillet over medium heat. Cook the patties on each side until deep golden brown and crispy.
