Cornish Hens with Wild Rice Stuffing

Ingredients
- 2 Cornish hens
- 2 Tbsp olive oil
- 1/4 tsp chopped fresh rosemary
- 1/4 tsp chopped fresh thyme
- 1 clove garlic minced
- 1/8 tsp kosher salt
- 1/8 tsp black pepper
- 2 cups wild rice stuffing (see recipe)

Instructions
- Preheat oven to 375 degrees.
- In a small bowl, combine rosemary, thyme, garlic, salt, and pepper. Mix well.
- Wash hens inside and out. Pat dry.
- Fill the cavity of each hen with wild rice stuffing. Use a toothpick to secure the skin and drumsticks around the stuffing.
- Place hens in a roasting dish. Rub hens with olive oil. Sprinkle the herb mixture over the hens.
- Bake for 40 - 45 minutes (or internal temperature of 165 degrees).
