wild rice stuffing
(see recipe)
Instructions
Preheat oven to 375 degrees.
In a small bowl, combine rosemary, thyme, garlic, salt, and pepper. Mix well.
Wash hens inside and out. Pat dry.
Fill the cavity of each hen with wild rice stuffing. Use a toothpick to secure the skin and drumsticks around the stuffing.
Place hens in a roasting dish. Rub hens with olive oil. Sprinkle the herb mixture over the hens.
Bake for 40 – 45 minutes (or internal temperature of 165 degrees).
