Chicken Thighs with Lemon and Thyme

Ingredients
- 6 chicken thighs
- 2 Tbsp olive oil
- 2 shallots chopped
- 4 cloves garlic thinly sliced
- 12 - 18 sprigs fresh thyme
- 2 lemons cut into 12 thin slices
- 1/2 tsp sea salt
- 1/2 tsp black pepper

Instructions
- Preheat oven to 400 degrees.
- Using paper towels, pat chicken dry. Trim off excess skin and fat and lightly salt and pepper the both sides of the chicken.
- Heat oil in oven proof skillet over medium heat. Add chicken skin side down. Cook 10 – 12 minutes until golden brown.
- Turn chicken over and sprinkle the shallots and garlic around the pan. Place 2 – 3 sprigs of thyme on each thigh and top with 2 lemon slices.
- Transfer skillet to the oven. Cook for 25 – 30 minutes.
