Chicken Thighs with Lemon and Thyme

shallots
chopped

garlic

lemons
cut into 12 thin slices

Instructions
Preheat oven to 400 degrees.
Using paper towels, pat chicken dry. Trim off excess skin and fat and lightly salt and pepper the both sides of the chicken.
Heat oil in oven proof skillet over medium heat. Add chicken skin side down. Cook 10 – 12 minutes until golden brown.
Turn chicken over and sprinkle the shallots and garlic around the pan. Place 2 – 3 sprigs of thyme on each thigh and top with 2 lemon slices.
Transfer skillet to the oven. Cook for 25 – 30 minutes.
