Chicken Satay with Peanut Dipping Sauce

Ingredients
Marinade
- 1 Tbsp brown sugar
- 2 Tbsp curry powder
- 1 tsp ground turmeric
- 1/2 tsp ground ginger
- 2 Tbsp creamy peanut butter
- 1/2 tsp chili garlic sauce
- 1/2 tsp fish sauce
- 1/2 cup low sodium soy sauce
- 2 Tbsp coconut milk (optional)
- 2 cloves minced garlic
- juice of 2 limes
- 3 boneless, skinless chicken breasts
Dipping Sauce
- 1/3 cup creamy peanut butter
- 1/4 cup low sodium soy sauce
- 2 Tbsp chili garlic sauce
- 3 Tbsp rice vinegar
- 3 Tbsp honey
- 2 tsp ground ginger
- 2 cloves minced garlic
- juice of 1 lime

Instructions
- Add all marinade ingredients except chicken in a large Ziploc bag. Seal bag and shake well to combine.
- Cut chicken breasts into 2-inch wide strips. Cut those strips in half lengthwise so each strip in 3 – 4 inches long. (Can also buy pre-cut chicken tenders.)
- Add chicken to marinade. Let chicken marinate 1 – 4 hours (longer is better).
- Meanwhile, add all dipping sauce ingredients to a medium bowl. Whisk together until well combined.
- Remove chicken from marinade and place on skewers. Grill 3 – 5 minutes per side until done. Serve with peanut dipping sauce.
