Chicken Satay with Peanut Dipping Sauce

Instructions
  1. Add all marinade ingredients except chicken in a large Ziploc bag. Seal bag and shake well to combine.
  2. Cut chicken breasts into 2-inch wide strips. Cut those strips in half lengthwise so each strip in 3 – 4 inches long. (Can also buy pre-cut chicken tenders.)
  3. Add chicken to marinade. Let chicken marinate 1 – 4 hours (longer is better).
  4. Meanwhile, add all dipping sauce ingredients to a medium bowl. Whisk together until well combined.
  5. Remove chicken from marinade and place on skewers. Grill 3 – 5 minutes per side until done. Serve with peanut dipping sauce.
