Chicken Lettuce Wraps

Ingredients
- 1 Tbsp olive oil
- 1 pound ground chicken
- 2 cloves minced garlic
- 1/4 cup hoisin sauce
- 1/2 tsp ground ginger
- 3 Tbsp low sodium soy sauce
- 1 Tbsp rice wine vinegar
- 1 8 ounce can diced water chestnuts drained
- 2 chopped green onions
- 12 lettuce leaves (butter, iceberg, or romaine)

Instructions
- Mix hoisin sauce, soy sauce, rice wine vinegar, ginger, and garlic in a bowl.
- Heat olive oil in a saucepan over medium high heat. Add chicken and cook until browned and crumbly, about 3-5 minutes.
- Stir in hoisin sauce mixture and heat through, about 1-2 minutes.
- Stir in chestnuts and green onions until tender, about another 1-2 minutes.
- Scoop chicken mixture into lettuce leaves and roll up to eat.
