  1. Mix hoisin sauce, soy sauce, rice wine vinegar, ginger, and garlic in a bowl.
  2. Heat olive oil in a saucepan over medium high heat. Add chicken and cook until browned and crumbly, about 3-5 minutes.
  3. Stir in hoisin sauce mixture and heat through, about 1-2 minutes.
  4. Stir in chestnuts and green onions until tender, about another 1-2 minutes.
  5. Scoop chicken mixture into lettuce leaves and roll up to eat.
