Chicken Cacciatore

Ingredients
- 3 -4 pounds chicken I prefer boneless, skinless breasts and thighs cut into large pieces, but you can also use a cut-up fryer
- 2 cloves garlic chopped
- 1 medium onion diced
- 1/2 pound sliced mushrooms
- 1 14.5 oz can diced tomatoes
- 1/2 tsp dried oregano
- 3/4 cup dry white wine
- 2 cups chicken stock
- 1/4 pound fresh green beans
- 1/2 red bell pepper sliced lengthwise
- 4 Tbs olive oil

Instructions
- Heat 2 tablespoons of olive oil in a dutch oven. Salt and pepper chicken to taste and brown chicken on all sides. Remove chicken.
- Add onion and saute until translucent.
- Return chicken to the pan and add garlic, oregano, white wine, and chicken stock.
- Cover and reduce heat to a simmer.
- In a separate pan, heat 2 tablespoons of olive oil and sauté mushrooms.
- Pour the sautéed mushrooms over the chicken. Add tomatoes and green beans and red bell pepper.
- Cover and simmer for 30 to 40 minutes.
