I prefer boneless, skinless breasts and thighs cut into large pieces, but you can also use a cut-up fryer

diced tomatoes

dried oregano

dry white wine

chicken stock

fresh green beans

red bell pepper
sliced lengthwise

Instructions
Heat 2 tablespoons of olive oil in a dutch oven. Salt and pepper chicken to taste and brown chicken on all sides. Remove chicken.
Add onion and saute until translucent.
Return chicken to the pan and add garlic, oregano, white wine, and chicken stock.
Cover and reduce heat to a simmer.
In a separate pan, heat 2 tablespoons of olive oil and sauté mushrooms.
Pour the sautéed mushrooms over the chicken. Add tomatoes and green beans and red bell pepper.
Cover and simmer for 30 to 40 minutes.
