Baked Cod with Lemon and Garlic

Ingredients
- 2 6 ounce cod filets
- 3 Tbsp softened butter
- 2 cloves minced garlic
- 2 tsp olive oil
- zest of 1 lemon
- 1 Tbsp lemon juice
- 1 tsp chopped parsley
- 4 lemon slices
- 1/8 tsp sea salt
- 1/8 tsp black pepper
- 1/8 tsp paprika

Instructions
- Preheat oven to 400 degrees.
- In a small bowl combine butter, garlic, olive oil, lemon zest, lemon juice, parsley, salt, pepper, and paprika. Use a fork to mash into a paste consistency.
- Place the lemon slices on foil lined baking sheet and place cod on top of lemon slices.
- Divide butter evenly between filets and use a knife to spread it evenly over the top of the fish.
- Bake for 20 minutes.
