  1. Heat a large skillet over medium-high heat and add 1 tablespoon olive oil. Once hot, add the all the vegetables except arugula. Cook for 6-8 minutes, or until tender, stirring occasionally.
  2. Pour the cooked vegetables into a bowl.
  3. Add the remaining tablespoon of olive oil to the pan. Sauté the sausage, breaking it up into chunks with the back of the spoon, and browning it on all sides.
  4. Add the vegetables back to the pan and stir well to mix everything together. Cook for another 1 -2 minutes.
  5. Add the arugula and stir until the arugula is just wilted.
