Ingredients
- 2 boneless, skinless chicken breasts
- 4 ounces goat cheese softened
- 1 cup chopped fresh spinach
- salt & pepper to taste

Instructions
- Preheat oven to 375 degrees.
- In a small bowl, mash the goat cheese and spinach together with a fork until well blended.
- Starting at the thickest part of the chicken breast, cut a pocket along the length of the breast taking care not to cut all the way through.
- Stuff each breast with the spinach and goat cheese mixture. Close and secure the pocket with a toothpick.
- Salt and pepper the top of the breast. Bake for 30 – 35 minutes.
