Spinach and Goat Cheese Stuffed Chicken Breast
Instructions
  1. Preheat oven to 375 degrees.
  2. In a small bowl, mash the goat cheese and spinach together with a fork until well blended.
  3. Starting at the thickest part of the chicken breast, cut a pocket along the length of the breast taking care not to cut all the way through.
  4. Stuff each breast with the spinach and goat cheese mixture. Close and secure the pocket with a toothpick.
  5. Salt and pepper the top of the breast. Bake for 30 – 35 minutes.
