Pork Loin with Green Peppercorn Sauce

Ingredients
- 1 2 1/2 pound boneless pork loin
- 3 Tbsp olive oil
- 4 cloves garlic minced
- 1 tsp fresh rosemary finely chopped
- 1/4 tsp fresh thyme
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- 1 cup white wine
- green peppercorn sauce (see recipe)

Instructions
- Allow the pork to stand at room temperature for 30 minutes.
- Preheat the oven to 400 degrees F.
- Place the pork, fat side up, in a roasting pan just large enough to hold it comfortably.
- In a small bowl, whisk together the olive oil, garlic, rosemary, thyme, salt, and black pepper. Spread the mixture on top of the pork.
- Roast for 1 to 1 1/4 hours, until the internal temperature reaches 140 degrees F. Remove from the oven, and cover tightly with aluminum foil for 20 minutes.
- Slice and serve with green peppercorn sauce.
