Broccoli Beef

Ingredients
- 2 Tbsp olive oil
- 1 1/2 tsp ground ginger
- 3/4 tp black pepper
- 4 cloves garlic minced
- 1 onion sliced
- 1/2 carrot sliced
- 4 green onions chopped
- 1 cup broccoli florets
- 1 Tbsp cornstarch
- 1 cup beef stock
- 1/4 cups soy sauce
- 1 pound sirloin steak cubed

Instructions
- Mix cornstarch with the beef stock and soy sauce. Stir to remove any lumps and set aside.
- Heat oil in a large skillet or wok. Add ginger, pepper, and minced garlic to the skillet. Stir to mix well with the oil.
- Add beef and stir fry until the steak is no longer pink. Remove from skillet.
- Add the onion, carrots, and broccoli and stir fry until the onion is translucent and the carrots and broccoli become tender.
- Add the steak back to the skillet and stir to mix with onions and broccoli. Let it cook 1 – 2 minutes.
- Stir green onions into the mixture.
- Stir the cornstarch/beef stock mixture to remove any lumps and stir into the mixture. Let the sauce thicken a bit. If it gets too thick, gradually add more beef stock.
- Serve over rice.

The broccoli beef is the best version of this that I have ever tasted! The seasonings are absolutely perfect! I can’t wait to make it again!
