Baked Halibut with Thai Green Curry Sauce
Instructions
  1. Preheat oven to 425 degrees.
  2. Heat olive oil in a medium saucepan over medium-high heat. Add garlic and ginger and cook for one minute stirring constantly. Add curry paste and stir to combine.
  3. Add coconut cream, fish sauce, cilantro, lime juice, and lime zest. Stir to combine. Bring to a boil and reduce heat to simmer. Add bell pepper.
  4. Spray baking sheet with non-stick spray. Add halibut (skin side down) and lightly sprinkle with salt and pepper. Bake for 15 – 18 minutes.
  5. To serve, place some cilantro lime rice in the bottom of a bowl. Place baked halibut on top, and spoon curry sauce over and around the halibut.
