Baked Halibut with Thai Green Curry Sauce

Ingredients
- 4 6 ounce halibut filets
- 1 14 ounce can coconut cream
- 1 4 ounce jar Thai Green Curry Paste
- 1 Tbsp fish sauce
- 1 tsp minced fresh ginger
- 2 cloves minced garlic
- 2 Tbsp chopped cilantro
- 1/2 sliced red bell pepper
- zest of 1 lime
- juice of 1 lime
- 1 Tbsp olive oil
- salt & pepper to taste

Instructions
- Preheat oven to 425 degrees.
- Heat olive oil in a medium saucepan over medium-high heat. Add garlic and ginger and cook for one minute stirring constantly. Add curry paste and stir to combine.
- Add coconut cream, fish sauce, cilantro, lime juice, and lime zest. Stir to combine. Bring to a boil and reduce heat to simmer. Add bell pepper.
- Spray baking sheet with non-stick spray. Add halibut (skin side down) and lightly sprinkle with salt and pepper. Bake for 15 – 18 minutes.
- To serve, place some cilantro lime rice in the bottom of a bowl. Place baked halibut on top, and spoon curry sauce over and around the halibut.
