Instructions
  1. Mix bread crumbs and parmesan cheese together well, and spread on a plate. Place flour on a plate. Place half and half in a bowl.
  2. Butterfly chicken breasts and cut into four pieces.
  3. Lightly flour chicken on both sides. Shake off excess. Dip in half and half to fully cover each side.
  4. Cover in bread crumb mixture, patting down to ensure each side is evenly covered. Let breaded chicken stand for about 10 minutes to set.
  5. Heat olive oil in a skillet. Add chicken and cook about 4 minutes on each side or until golden brown. Check often to avoid burning.
