  1. Preheat oven to 400 degrees.
  2. Using paper towels, pat chicken dry. Trim off excess skin and fat and lightly salt and pepper both sides of the chicken.
  3. Heat oil in oven proof skillet over medium heat on the stove. Add chicken skin side down. Cook 12 – 15 minutes until golden brown.
  4. Turn chicken over and sprinkle the sausage and potatoes around the pan.
  5. Transfer skillet to the oven. Cook for 25 – 30 minutes.
