  1. Heat a large sauté pan over medium heat. Add olive oil and sweet potato and sauté for 2 minutes.
  2. Add sausage, mushrooms, broccoli, and bell pepper to the pan. Sauté for 5 minutes or until sweet potato becomes tender.
  3. Add spinach. Turn off heat and mix well until spinach is wilted.
